ONOMO Hotel Sandton is seeking a strong and experienced Senior Sous Chef to lead the kitchen operation at this property. This role carries full day-to-day responsibility for the kitchen. Given the size of the kitchen, the Senior Sous Chef will act as the culinary lead on site, overseeing quality, cost control, compliance, and team management.

We are looking for a hands-on, disciplined culinary professional who can manage a streamlined kitchen efficiently while maintaining consistent food standards and commercial awareness.

Key Responsibilities include:

  • Lead and manage all kitchen operations across restaurant and small event service.
  • Develop and maintain menus aligned with brand standards and operational capacity.
  • Manage food cost, stock control, purchasing, and supplier relationships.
  • Ensure full compliance with hygiene, food safety, and health regulations.
  • Supervise and develop the kitchen team, including rostering and performance management.
  • Maintain consistency in food quality, presentation, and portion control.
  • Responsible for the cost management of the department.
  • Work closely with the F&B team to ensure smooth service delivery.

Qualifications and Competencies:

  • Minimum 3–5 years’ experience as a Senior Sous Chef or similar leadership role in a hotel or quality restaurant environment.
  • Strong operational knowledge of cost control and kitchen management.
  • Proven ability to run a kitchen independently.
  • Experience in managing small-scale events or function catering.
  • Hands-on leadership style with strong attention to detail.
  • Ability to work effectively in a lean, structured environment..
